MISO CARAMEL PEANUT BRITTLE

This caramel brittle recipe is so easy to put together and the brittles are so yummy and addicting. White miso balances out the caramel sweetness with its deep and umami saltiness, which is a great addition to a peanut brittle recipe. The perfect sweet, salty, and buttery!

Ingredients:

  • 2 cups white sugar
  • 1/2 cup light corn syrup
  • 3 tbsp white miso paste
  • 6 tablespoons unsalted butter
  • 1/2 teaspoon baking soda
  • 1 1/2 cups roasted unsalted peanuts
  • 1/2 cup of water (or liquor like rum, bourbon for extra flavoring)

Preparation:

  • Line a rimmed baking sheet with parchment paper or foil and grease with nonstick cooking spray.
  • Add sugar, corn syrup, miso, and water (or rum/ bourbon) in a medium sauce pan. stir to combine and stick a candy/ deep-fry thermometer in the sauce pan.
  • Bring mixture to a boil over medium heat and until the the temperature reaches 340F, approximately 15 minutes.
  • Quickly add cubed butter and baking soda. Stir quickly until smooth then add peanuts. Make sure the peanuts are distributed throughout the caramel mixture.
  • Pour onto lined baking sheets and thin out the layer with rubber spatula.
  • Let cool to harden for 1-2 hour. Break into pieces and serve or store in airtight container.

Tips:

  • Be really careful not to touch or taste the hot caramel as it can give you a really bad burn!
