
This Lemongrass BBQ chicken wing recipe is hands down my favorite dish to make and eat. My mom often made this dish for me when I was younger and I always end up doubling the rice (best with sticky rice! – see sticky rice cooking hack) because they were SO DELICIOUS and addicting.
We will use fresh lemongrass in this recipe and marinade the chicken overnight in refrigerator for the best flavor but if you don’t have time, marinating for at least 30 minutes will do the trick.
This lemongrass chicken is perfect for all seasons. You can either finish it in the oven or on grills for the extra smokiness.
Ingredients:
– 2 lbs of Chicken wings (whole wing)
– 2 large Lemongrass
– 4 cloves of garlic
– 1 tbsp cilantro roots or stems, chopped
– 1 tsp of white peppers, cracked
– 4 tbsp of oyster sauce
– 2 tbsp of fish sauce
– 1 tsp of white sugar
– 2 tbsp of neutral oil (i.e. canola, avocado oil)
Preparation:
# Marinade
– Peel a few dried layers of lemongrass off. This part of the stalk is not very fragrance and is tough. Then, roughly chop the lemongrass (your blender will thank you and you’ll end up with a smaller lemongrass bits in your marinade).
– Blend all ingredients (chopped lemongrass, garlic, cilantro roots, white pepper, oyster sauce, fish sauce, white sugar, and oil) together in a blending machine or hand blender. Blend until smooth but pieces of lemongrass fiber can remain visible.
– Mix the marinade with chicken wings well and let sit for at least 30 minutes, and ideally, overnight in the refrigerator
# Cooking the wings
Option #1 (Oven & Grill)
– Bake the chicken wings in oven at 350F for 20-25 minutes
– Grill until the skin is crispy/ charred for approximately 5-10 minutes.
Tip: Bake in advance for easy outdoor grilling/ party hosing (since you’ll only have to finish them quickly on the grill)
Option #2 (Oven-only)
– For chicken wings, bake in oven at 350F for 30-35 minutes, until the skin is golden brown. For whole chicken, bake at 425F for 45-55 minutes, until internal temperature reaches 165F
Recommended with Thai sticky rice or jasmine rice!
