STRAWBERRY & LAVENDER PAVLOVA

I have always seen Pavlova on Pinterest and ALWAYS wanted to try or make one for myself. I currently live in the US and this dessert is not that widely available.
Well, this year is my year! I was in charge of hosting a New Year dinner for 10 and this might just be my chance haha (because Kitchenaid works better when you have more volume of egg white).

I researched a few recipes on the internet and combine tips and tricks together to what I know. If you are looking for a dessert to wow at your next party, especially if you have gluten free friends, this would be a perfect one to try at your next hosting!

The lavender cream makes a huge difference in my opinion. It adds beautiful floralness to the tart macerated strawberries.

This recipe makes 10-11 mini Pavlova.

Pavlova Meringue Base

Ingredients:

  • 200 g egg whites (about 6 eggs)
  • 400 g white sugar
  • 2 tbsp corn starch
  • 1 tbsp vinegar
  • 1 tsp salt

Preparation:

  • Whisk egg white, salt with a countertop or handheld mixer on high speed.
  • Once the egg whites become white and foamy (no longer look like liquid eggwhite), add sugar 1 spoon at a time.
  • Whisk about 15 mins until sugar complete dissolve. Perform the finger test by rubbing mixed meringue between fingers. If it feels sandy/ course, continue to whisk until sugar is completely dissolved and the whipped egg white is smooth.
  • Once the meringue reaches ‘stiff peak’ stage, we are ready.
  • Spread the meringue onto lined baking sheets (appx. 5″ wide and 1″ thick). I use the back of the spoon to push down the center so it can be filled with whipped cream later.
  • Bake at 215F for 1 hour on lined baking sheets.
  • After 1 hour, let sit in oven with door open for 1-2 hour to completely cool before storing in airtight containers.

Lavender Whipped Cream

Ingredients:

  • 1 cup of heavy whipping cream
  • 10 dashes Bitter Truth’s lavender bitter
  • 1 tsp vanilla extract

Preparation:

  • Whisk all ingredients together in a mixer until it reaches soft peak. I do not add additional sugar here to balance out the sweetness of the meringue.

Tips: store in airtight container for later use. Lavender bitter is a also wonderful addition to you home bar arsenal.

Macerated Strawberry

Ingredients:

  • 1 lb package of strawberry
  • 1 tsp salt
  • 1 tbsp sugar
  • 1/2 lemon juice
  • lemon zest

Preparation:

  • Wash strawberry thoroughly.
  • Combine all ingredients together and mix well. Let macerate for at least 10 minutes. The natural juice of the strawberry will come out and combine with salt and sugar.
